PS. I LOVE mayo and mustard, but feel free to modify to your liking. Also, I only had red onion on hand, but happily would have added relish, peppers, etc. Do you! 😉
1 can chickpeas, rinsed and patted dry
1 1/2 tbsp. vegan maya
1/2 tbsp. mustard
salt and pepper to taste
Optional: chopped red onion, green pepper, red pepper, relish, celery
In a bowl, mash the chickpea. Add in remaining ingredients and combine. Season to taste. Enjoy as a sandwich, in a wrap or with crackers. Byee! 🙂
