I love meals that I can cook in a single pot. With the exception of pan-frying your vegan chicken in a separate skillet, this dish is mostly made in a single stockpot. Let me know how you like this Super easy Vegan Arroz con “Pollo”. #vegan #arrozconpollo
2 cups your fave vegan chicken options, seasoned, pan-fried, and cubed
4 tbsp. olive oil
1 tbsp. garlic minced
1 cup onion chopped
1 cup green pepper diced
1 cup red pepper diced
½ tsp Curry
2 tsp. paprika
Salt and pepper to taste
3 cups vegetable broth
1/2 tsp saffron
2 cups basmati rice
1 bag of frozen mixed vegetables
Green onions, chopped for garnish
Heat a stockpot over medium heat, then add oil. Add in garlic and allow to cook for 2 minutes until fragrant.
Add in onion, green pepper, and red pepper. Season with curry, paprika salt, and pepper and allow to cook for 2 minutes. Stir in broth and add saffron and stir to combine.
Add in rice and frozen veggies and cover. Bring to a boil, then reduce the heat to low and allow to cook 10-15 minutes until the rice is cooked through and liquid is absorbed.
Add prepared vegan chicken and combine. Garnish with green onion and enjoy!
