I love meals that I can cook in a single pot. With the exception of pan-frying your vegan chicken in a separate skillet, this dish is mostly made in a single stockpot. Let me know how you like this Super easy Vegan Arroz con “Pollo”.⁣ #vegan #arrozconpollo

 

2 cups your fave vegan chicken options, seasoned, pan-fried, and cubed⁣
4 tbsp. olive oil⁣
1 tbsp. garlic minced⁣
1 cup onion chopped⁣
1 cup green pepper diced⁣
1 cup red pepper diced⁣
½ tsp Curry⁣
2 tsp. paprika⁣
Salt and pepper to taste⁣
3 cups vegetable broth⁣
1/2 tsp saffron⁣
2 cups basmati rice⁣
1 bag of frozen mixed vegetables ⁣
Green onions, chopped for garnish⁣

 

Heat a stockpot over medium heat, then add oil. Add in garlic and allow to cook for 2 minutes until fragrant.

 

Add in onion, green pepper, and red pepper. Season with curry, paprika salt, and pepper and allow to cook for 2 minutes. Stir in broth and add saffron and stir to combine.

 

Add in rice and frozen veggies and cover. Bring to a boil, then reduce the heat to low and allow to cook 10-15 minutes until the rice is cooked through and liquid is absorbed.

 

Add prepared vegan chicken and combine. Garnish with green onion and enjoy!
