Simple Vegan Pasta

I know I haven’t posted food in a while. 😅 #vegan #easymeals

I spontaneously made this the other night and it was amazing!

These are my approximate measurements but definitely adjust to your liking. Easy to sub different vegetables or non-wheat pasta. :-)⁣⁣

⁣3 tbsp. Olive Oil⁣⁣
1 tbsp. Vegan butter⁣⁣
3 cloves garlic, minced⁣⁣
1 cup mushroom, diced⁣⁣
1 cup cherry tomatoes, halved⁣⁣
4 spears asparagus, quartered⁣⁣
salt & pepper to taste⁣⁣
2 tsp dried Oregano⁣⁣
2 cups Whole Wheat Pasta, cooked and drained⁣⁣
1/4 cup Sun-dried tomato⁣⁣
2 tbsp Nutritional yeast⁣⁣
1/4 cup Basil, coarsely chopped⁣⁣

Heat pan. Add olive oil and butter. Add garlic and allow to cook for 2 minutes. Add in remaining vegetables. Season with salt, pepper, and oregano. Allow to simmer 10 minutes. Stir in cooked pasta, sun-dried tomato, nutritional yeast, and basil. Remove from heat. Enjoy.
