I spontaneously made this the other night and it was amazing!
These are my approximate measurements but definitely adjust to your liking. Easy to sub different vegetables or non-wheat pasta. :-)
3 tbsp. Olive Oil
1 tbsp. Vegan butter
3 cloves garlic, minced
1 cup mushroom, diced
1 cup cherry tomatoes, halved
4 spears asparagus, quartered
salt & pepper to taste
2 tsp dried Oregano
2 cups Whole Wheat Pasta, cooked and drained
1/4 cup Sun-dried tomato
2 tbsp Nutritional yeast
1/4 cup Basil, coarsely chopped
Heat pan. Add olive oil and butter. Add garlic and allow to cook for 2 minutes. Add in remaining vegetables. Season with salt, pepper, and oregano. Allow to simmer 10 minutes. Stir in cooked pasta, sun-dried tomato, nutritional yeast, and basil. Remove from heat. Enjoy.
