This is what happens when I’m craving one of my childhood faves, Tuna Salad! 🥪 #vegan #plantbased

PS. I LOVE mayo and mustard, but feel free to modify to your liking. Also, I only had red onion on hand, but happily would have added relish, peppers, etc. Do you! 😉

1 can chickpeas, rinsed and patted dry
1 1/2 tbsp. vegan maya
1/2 tbsp. mustard
salt and pepper to taste
Optional: chopped red onion, green pepper, red pepper, relish, celery

In a bowl, mash the chickpea. Add in remaining ingredients and combine. Season to taste. Enjoy as a sandwich, in a wrap or with crackers. Byee! 🙂

Vegan Pumpkin Bread

Living in a place where the shelves don’t fill with pumpkin-flavored everything during pumpkin season is killing me! 😩

So I decided to take matters into my own hands and make this pumpkin bread. #vegan #pumpkin

I made this without an egg replacement and without sugar. It’s super moist and still sweet. Enjoy!

Oh, and be better than me and let it cool off, cause I just burned the f outta my mouth.

Totally worth it though! Yum!

2 cups whole wheat all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 1/2 tsp pumpkin spice
1 tsp cinnamon
pinch salt
1 can pumpkin
1/3 cup coconut oil
2/3 cup pure maple syrup
1/4 cup apple sauce
1/4 cup dairy-free milk
1 tbsp vanilla
Optional: nuts, raisins, chocolate chips, coconut shreds, pumpkin seeds

Preheat the oven to 375 degrees F. Grease and powder a baking loaf pan.

Grab two mixing bowls. In one, mix all the dry ingredients. In the second bowl, whisk together all the wet ingredients. Fold the dry mixture into the wet gently. Add whatever extras you like (nuts, raisins, chocolate chips, coconut shreds, etc.).

Scrape the batter into the pan. Sprinkle with toppings if you wish.

Bake for 20 minutes at 375 degrees F, then loosely tent the pan with foil to keep the top from browning too quickly. Bake for another 35 to 45 minutes (55 to 65 minutes total), until a toothpick inserted in the center of the loaf comes out clean.

Allow to cool in the pan for a full hour. Enjoy!

Chickpea Flour is an amazing staple to have in your kitchen. It’s packed with nutrients, fiber, and protein and works great as an egg substitute. Here’s how to use it for an amazing Vegan French Toast 🍞 🌱 ⁣ #vegan #frenchtoast

Vegan French Toast
4 thick slices of soft bread⁣
1/2 cup dairy-free milk⁣
2 tbsp chickpea flour⁣
1 tsp ground cinnamon⁣
1 tsp vanilla extract⁣
1 tbsp. Maple Syrup⁣
1 tbsp vegan butter ⁣

Whisk the milk, chickpea flour, cinnamon, vanilla, and syrup together in a bowl.⁣

Heat a skillet over medium heat. Add butter and allow to melt.⁣

Dip a slice of the bread into the mixture and coat well on each side. Place in the skillet and fry on medium heat for a minute or two on each side until golden brown. Repeat with the other slices.⁣

Serve with fruit, compote, or syrup. Enjoy!⁣

I love meals that I can cook in a single pot. With the exception of pan-frying your vegan chicken in a separate skillet, this dish is mostly made in a single stockpot. Let me know how you like this Super easy Vegan Arroz con “Pollo”.⁣ #vegan #arrozconpollo

2 cups your fave vegan chicken options, seasoned, pan-fried, and cubed⁣
4 tbsp. olive oil⁣
1 tbsp. garlic minced⁣
1 cup onion chopped⁣
1 cup green pepper diced⁣
1 cup red pepper diced⁣
½ tsp Curry⁣
2 tsp. paprika⁣
Salt and pepper to taste⁣
3 cups vegetable broth⁣
1/2 tsp saffron⁣
2 cups basmati rice⁣
1 bag of frozen mixed vegetables ⁣
Green onions, chopped for garnish⁣

Heat a stockpot over medium heat, then add oil. Add in garlic and allow to cook for 2 minutes until fragrant. Add in onion, green pepper, and red pepper. Season with curry, paprika salt, and pepper and allow to cook for 2 minutes. Stir in broth and add saffron and stir to combine. Add in rice and frozen veggies and cover. Bring to a boil, then reduce the heat to low and allow to cook 10-15 minutes until the rice is cooked through and liquid is absorbed. Add prepared vegan chicken and combine. Garnish with green onion and enjoy!

I spontaneously made this the other night and it was amazing!

These are my approximate measurements but definitely adjust to your liking. Easy to sub different vegetables or non-wheat pasta. :-)⁣⁣

⁣3 tbsp. Olive Oil⁣⁣
1 tbsp. Vegan butter⁣⁣
3 cloves garlic, minced⁣⁣
1 cup mushroom, diced⁣⁣
1 cup cherry tomatoes, halved⁣⁣
4 spears asparagus, quartered⁣⁣
salt & pepper to taste⁣⁣
2 tsp dried Oregano⁣⁣
2 cups Whole Wheat Pasta, cooked and drained⁣⁣
1/4 cup Sun-dried tomato⁣⁣
2 tbsp Nutritional yeast⁣⁣
1/4 cup Basil, coarsely chopped⁣⁣

Heat pan. Add olive oil and butter. Add garlic and allow to cook for 2 minutes. Add in remaining vegetables. Season with salt, pepper, and oregano. Allow to simmer 10 minutes. Stir in cooked pasta, sun-dried tomato, nutritional yeast, and basil. Remove from heat. Enjoy.
