Roasted Brown Sugar Carrots

2 tbsp. extra-virgin olive oil
1 1⁄2 pounds baby carrots with the tops still on, peeled Salt and Pepper to taste
2 tbsp. packed light-brown sugar
1 tbsp. molasses
1 1⁄2 tbsp. Earth Balance
Pinch rosemary

Preheat oven to 425°.

In a baking dish add all of the ingredients Except for butter. Stir to coat. Top with pieced butter and place in the oven uncovered. Allow to roast for 25-35 minutes until desired softness. Remove from oven and allow to cool. Enjoy!
